Mini Savoury Baby Pea & Corn Muffins

Ingredients

1 cup self raising flour
½ cup McCain Baby Peas
½ cup McCain Super Juicy Corn Kernels
50g lean ham
½ cup reduced fat cheddar cheese, grated
pinch of black pepper
1 egg, lightly beaten
¾ cup reduced fat milk
60g margarine

Method

Preheat fan forced oven to 200oC. Sift flour into a large mixing bowl. Add frozen McCain Baby Peas, frozen McCain Super Juicy Corn Kernels, ham, cheese and pepper and mix well. Combine egg, milk and margarine in another bowl. Add to flour and vegetable mixture and stir gently with a large spoon until mixture is just combined. Spoon mixture into lightly greased, non-stick, 24 hole mini muffin pans. Bake for 15 minutes or until cooked and golden. Remove muffins from pans and place onto cooling rack.
