Ingredients
750gm McCain Potato Chunks, steamed
1 small red onion, sliced
150gm Kalamata olives
150gm feta cheese, crumbled
1 punnet cherry tomatoes, halved
1 tbls fresh oregano leaves
1 tbls fresh parsley leaves
Zest of 1 lemon
Juice of ½ lemon
2 tbls olive oil
Salt and fresh cracked pepper to taste
100gm rocket leaves to serve
Method
Place all ingredients, reserving rocket for garnish, in a large bowl and gently combine. Arrange mix on a large platter and top with fresh rocket.
Chef’s Tip
Serve this salad as a light lunch or add grilled lamb strips for a hearty main meal.
