Ingredients
750gm McCain Sliced potatoes, steamed
2 tbls basil pesto
50gm parmesan cheese, shaved
50gm pine nuts, toasted
Pinch of chili flakes to garnish, optional
Method
Combine warm potatoes with pesto and place on a serving platter. Top with parmesan, pine nuts and chili flakes if using. Serve warm.
Chef’s Tip
For a flavour alternative try using a sun dried tomato pesto or olives instead of pine nuts.
