Ingredients
1 tbsp margarine
1 tsp mustard seed
2 tsp coriander seed
½ cup onion, finely chopped
1 tsp fresh ginger, grated
350g McCain Baby Beans
200g McCain Super Juicy Corn Kernels
½ cup flaked coconut
Method
In a pan, melt margarine over medium-high heat. Add mustard seed, coriander seed, onion and ginger and sauté for 1 minute. Add McCain Baby Beans, and McCain Super Juicy Corn Kernels and stirfry for 5 minutes. Stir in coconut, cover and cook for 10 minutes over low heat, until vegetables are tender. Serve hot.
