Ingredients
250g McCain Whole Beans
1 onion, sliced
1 garlic clove, diced fine
3 tomatoes, chopped in 1cm cubes
2 tbsp extra virgin olive oil
pinch black pepper
1 cup breadcrumbs
1 tbsp parsley, chopped fine
¼ cup parmesan cheese
Method
Cook McCain Whole Beans as per packet instructions, drain and set aside. In a frypan sauté onion, garlic and tomatoes in olive oil and add pepper to taste. Sauté for 5 minutes. Place cooked McCain Whole Beans in an ovenproof dish, and cover with hot tomato mixture. Top with breadcrumbs, parsley and then parmesan cheese. Bake under grill for 10 –12 minutes, or until golden on top, then serve.
