Ingredients
1 Bag McCain Season's Choice Three Berry Mix
2 cups sweet biscuits
90g melted butter
2 tsp hot water
1 tbsp gelatine
¼ cup hot water
375g cream cheese (at room temperature)
½ cup sugar
1 tsp vanilla essence
¼ cup lemon juice
1 ¼ cups whipped cream
Method
Crush biscuits finely and combine with the melted butter and hot water. Press into a non-stick spring form pan that has been sprayed with cooking spray and refrigerate. Dissolve gelatine in the other lot of hot water. Beat the cream cheese until smooth then gradually add the sugar, gelatine, vanilla essence and lemon juice. Beat well. Fold whipped cream into the cheese mixture and pour into prepared crumb crust. Chill until firm. Decorate with McCain Season's Choice Three Berry Mix.
