1 450g McCain Season's Choice Four berry Mix
4 egg whites
1 cup caster sugar
1 tsp vanilla essence
2 tsp vinegar
1 tsp cornflour
1 cup double cream, whipped
Method
Preheat oven to 150c for 10 mins. Draw an 8 inch circle on an oiled greaseproof paper and place on baking sheet. Whisk the egg white stiffly; add half of the sugar and whisk till stiff again; fold in the remaining sugar. Add essence, vinegar and cornflour. Spread mix over the circle and form a case. Bake in the centre of the oven for an hour or till firm; leave to cool. Top with whipped cream and fresh McCain Season's Choice berries, dust with icing sugar, and serve.
