Potato Hash with Ham & Eggs

Ingredients

1 tbls olive oil
1 clove garlic, sliced
3 spring onions, chopped
½ head Chinese cabbage, finely sliced
300gm ham, cubed
750gm McCain Diced Potatoes, steamed
Salt and pepper to taste
4 poached or fried eggs

Method

Heat the oil in a large heavy fry pan. Sauté garlic and onions until translucent. Add ham and cabbage and cook until cabbage is tender. Gently stir in the potatoes and season to taste. Serve topped with warm eggs.
